What inspired you to start a wedding cake business, and have you always wanted to design and create cakes?

I always baked along with my granny when I was little, but it really became a passion whilst living in Yorkshire. We’d moved away for my husband’s job so in the few months whilst I job searched, I filled the time baking and absolutely loved it. When we moved back to Staffordshire, we opened our own coffee shop where I baked mainly cupcakes, then people started ordering celebration cakes, which lead on to wedding cakes, and I just feel in love with the wedding industry so really just started to push that area of the business.

Where do you find your wedding inspiration?

I love to design around the wedding dress and flowers, but I think working with the couple to find what’s personal to them, such as flavours that they both enjoy is wonderful. I am a huge fan of ceramic design and often draw inspiration from clay, or painting on the surface of the cake, almost like a glaze.

What style of wedding cakes do you offer couples?

I mainly work with buttercream or ganache cakes, but I’m just starting to offer my 2020 couples fondant cakes as it’s a medium that I can push a little further. My style is modern romance, I love to work in a minimal style but with beautiful floristry and added touches such as painted accents and handmade sugar sequins.

What is your favourite style / design of cake to create for couples?

I love to work on tall cakes, I think they look so elegant, adding gold leaf is also a style I like, although fiddly it always looks amazing when finished. I’d love to do more hand painted cakes too.

Do you see any upcoming wedding cake trends for weddings in 2020?

I think ‘negative space’ is going to be a new thing in 2020, separating cake tiers with see-through spacers or quirky geometric objects. Although I don’t see semi-naked cakes going anywhere soon, I do think people will try different decorations such as dried flowers, donuts or handmade sails.

Which are your most popular flavours? Or do you have any recommended flavour combinations?

My most popular are Raspberry & White Chocolate, Lemon & Almond and Sticky Toffee Pudding. I try to offer seasonal options, so for Autumn/Winter our Pumpkin Spice is very popular too.

How would you recommend couples choose a style of cake?

Pinterest can be a blessing and a curse for designers as it’s brilliant for couples to see cake styles but can also take the creative freedom away from us as designers, so I always suggest using it to develop a mood board rather than a particular cake board. That way I can see colours, textures and themes that my couples like without it clouding my design process. I also love a sneak peek at the wedding dress!

How would you style a wedding dessert or cake table?

I can’t wait for our first dessert table orders go out next year! We’re currently building our donut wall, and I really love the idea of having an ombré donut wall in a beautiful dusky pink, and as I’m a sucker for flowers I’d love the table full of fresh cakes and flowers. Mini cupcakes topped with edible flowers and our iced gems in cute colours would look beautiful too.

What’s the most extravagant wedding cake you’ve ever created?

I had a couple who ran off to Las Vegas to get married but wanted a family celebration back here too, so although the cake itself looked fairly classical the flavours were a little more unusual. The couple wanted a rustic cake with an ‘Elvis’ feel, so I designed a banana cake with peanut butter and maple bacon filling for one tier, a Malibu-soaked coconut sponge for another and a peanut and jelly top tier. I would imagine they needed to lie down after eating it!
