Tell us a little bit about your lovely cake business and where it all began?
My Passion for baking began whilst studying Applied arts at University where I would regularly bake and cook for friends. A career in food struck me as a great way to combine my love of baking with my Passion for design.
I spent many years working as a pastry Chef in hotels, restaurants and working with Artisan Patisseries. Eventually I moved into bakery product development and have been lucky enough to work with some high end retail clients before deciding to branch out on my own in January of 2016.
What cake flavours do you offer?
I offer seasonal menus as inspiration for engaged couples. For example Blood Orange & rhubarb meringue for spring, cherry bakewell for summer, Cinnamon & toffee apple for autumn then Caramelised white chocolate, ginger & blackcurrant for winter. I also create fruit cakes in a few flavours, my bestseller being sour cherry, almond & amaretto.
Full menus are to be found on my website, however flavours cake tastes can be a very personal thing, everyone has a favourite, and I very often create tailor made flavours for clients.
What do you feel makes your service & cakes stand out from the crowd?
My style is contemporary with a nod to tradition, and I love exploring modern techniques, flavours and trends. With a background in product development i’m always future focused in both design and recipe development to ensure my cakes look and taste the very best they possibly can.
Do you offer anything else in addition to cakes?
I offer a whole range of patisserie items such as macarons, doughnuts, madeleines and meringues, which can be used to create a dessert table, afternoon tea or for individual wedding favours. I also offer alternative cakes such as the dessert tower cake, which is a playful twist on the croquembouche.
What do you love the most about being involved in the wonderful world of weddings?I love the whole process, from meeting newly engaged couples, working with them to design a cake that is personal, individual and unique to them to the magic of putting the final touches to a wedding cake in a room waiting expectantly for a celebration. It’s a great honour to be able to create something so special for such an important day.
Finally, what’s been the most popular cake choice of 2016 so far and what cake trends do you see for 2017?
In 2016 the Nearly Naked cake has certainly been the winner, combined with fresh edible flowers these offer simple elegance and a focus on flavours that I’m certain will continue into 2017. There’s also a move into alternative & more playful cakes and dessert grazing stations, such as doughnut displays and cheese towers. Metallics are proving popular also, adding stylish sparkle through gold leaf, lustre and calligraphy.
